In a pan, heat oil, add mustard and after it starts spluttering ad urad dal. Fry a bit till it gets brown and then add finely sliced onions and fry till transparent. To this add tomatoes and cook till the oil separates. Add chilli powder, turmeric powder and salt. Add the egg pieces now to the pan and top it with the gravy. Add chopped corriander and curry leaves on top and leave for 10-15mins and wait for the gravy to seep into the egg.... Serve with rice or Roti :)
