COCONUT MILK RICE

Take little ghee or oil in a pan, add cinnamon sticks 2or3, followed by cloves 2 no. cardomom 3 or 4, long sliced garlic 2or 3pods, then long sliced onion 1, green chillies accdg. to your taste. Fry it one by one. When onion becomes golden brown, add previously soaked basmati rice, (atleast 20 mts) fry for a while, then add light or third coconut milk 1 cup if rice is 1 cup. bring it to boil. Now add thick coconut milk or first one 1/2 a cup, add salt, when it starts boiling, simmer for 7-8 mts or cook until it is done. If it is a cooker, one whistle sound. (the way we make pulav). Decorate with coriander leaves.
If you use, readymade milk firsttime dilute and add, then use as it is for the second installment. If you start from the scratch, take milk only when you keep the cooker on the stove, 'coz colour will be very dull and if the milk is fully too thick also, the color will be yellowish.
You can make without cloves and garlic also.

Coconut milk Pulao
Ingredients
2 Cups Rice; 1/4 tsp Turmeric Powder; Salt to Taste, 4 – 6 Tbsps. Butter Pattai - 1 pc. Of 2” long Cloves 4-6; Elachi – 6 no's, Coconut Milk - 3 Cups, Bay Leaf-2.

Method
Wash & drain Rice fry in 2 tbspns. butter & place in the Electric Cooker Bucket, to it add the spices, Coconut Milk, remaining Butter, Salt to Taste, Bay Leaves, Turmeric Powder - cover the cooker, plug it on - Leave to cook - it will automatically cut off when the Rice is done - leave to cool down for 10 mins. then put the Rice on to a place & fluff with Fork - Goes well with Ball Curry, Devil Chutney; Tongue Vindaloo; or Vegetable Kurma or Small Potatoes in Gravy You could add fried cashewnuts as garnish with 2 –3 tbspns of ghee melted & poured on top.
