Know a book to introduce oneself in indian cooking?

I already have lots of spices for indian cooking but would like to know more about. Questions like: What is the difference between curries? Which flavours make a dish something different from another one? Which are the main cooking ways?

Hello Eduardo,
I've waited for someone more experienced in this cuisine to give you an answer. However, a good primer is "50 great Curries of India" by Camellia Panjabi (Kyle Cathie Limited, Great Britain, 1994 ISBN 1 85626 128 X). The author ran a restaurant in London. There is a longer introduction with explanation of culinary differences by region and the philosophy of the cuisine. It has recipes for manny kinds of curries as well as rice dishes, breads, vegetables, potatoes, pulses, raitas, chutneys, papdams, relishes, and sweets. It is a good beginning. I hope you can find it.
