aarkengillum ellupathil vattayappam ondakkaanolla shortcut vazhi onnu paranju tharaamo...please. I've asked around for suggestions, but keep getting only long-winded recipes. I'm sort of desperate for an easy one.

Priya, I guess this is not the right way but I do it whenever I make appam I get that " appam mavu' less watery than usual appam mavu, add lil more sugar and all these cardamom raisins , nuts etc and bake it in the oven may be around 300- 400 depending on the oven you use . Not sure how many minutes I keep , I just keep checking it every now and then. It came out okay for me although I feel this is almost a pathetic recipie. Hope you get a better recipie which I might as well need too.

Sree, Thanks a bunch for the vattayappam recipe (seems yummy)... I'm really going to try it on Sunday itself. But maybe I'll steam it for 1/2 hr instead of baking it.

Vattayappam
Roasted raw rice flour 2 cups
Coconut grated 1 ½ cup
Jeera ½ teaspoon
Sugar 3 tablespoon
Salt ½ teaspoon
Ghee 1 tablespoon
Water 1 cup
Dry yeast 1 teaspoon
Sugar 1 teaspoon
Lukewarm water ¼ cups
Mix yeast with sugar.
Pour lukewarm water, mix and keep aside to ferment (until froth appears on the surface).
Mix rice flour and yeast ferment and knead into a soft dough.
It must be kneaded well for at least 10 minutes.
Grind coconut, jeera and sugar and add it with water to the dough to make it a stiff batter .
Keep it over night.
Add salt and mix well.
Grease a cake dish or round bottomed aluminium vessel well with ghee.
Pour the batter into it up to the half way mark.
Keep it in an iddli steamer and cook for 20 minutes. Take it out from the steamer.
Loosen the sides with a knife and cut it into pieces.
You can use butter for ghee since us malayalees are not much of ghee users

Here is another recipe. I got this from the thread
"A Traditional Christmas Menu" by Rakhi
Vattayappam

rice flour -- 2 cups
grated coconut -- 1 cup
sugar --1/2 cup
yeast --1 tsp
coconut milk -- as desired
salt -- a pinch
coconut water
egg whites--2
raisins
Grind coconut to a fine paste and mix with flour.Add coconut milk also.Mix yeast with warm water,coconut water and sugar in a cup and keep aside.It will rise after 10 min.s.Mix this with the dough.Add sugar and egg whites.Mix well and keep aside for rising.Grease a thali or shallow round vessel with oil/ghee and pour the batter.sprinkle a few raisins,cherries diced etc on top.Steam in a steam cooker.
