How much water for fried rice?

Hi,whenever I make fried rice in pressure cooker,it becomes sticky.I use Basmathi rice.I also add 1 cup of veg.s in it.I add in the ratio 2cups water for 1 cup basmati rice.cook for 2 whistles and keeps for 5 minuts then releases all pressure.always the bottom is burnt and top soggy.pls give some advice.how much water for 4 cups of rice?

I'll give you a simple recipe for fried rice.All the best!
This is the Malay fried rice.
Ingredients:
1 bowl cold,cooked rice
4 shallots
2 cloves of garlic
25 gms of anchovies(nettili karuvadu)
2 red chillies
2 long beans
Salt to taste
1 tbsp oil
Method:
1.Clean and wash the anchovies.Pound together with the shallots , garlic and red chillies.
2.Clean the long beans and dice them
3.Heat the oil in the frying pan and fry the pounded ingredients until fragrant.
4.Add in the long beans , stir well and cook over a medium flame.
5.Add in the rice , mix well and season with salt to taste.
Chinese fried rice
Ingredients :
2 tbsps of boiled shrimps
1 medium sized onion - chopped
half cup of precooked green peas
2 red chillies - sliced
400 gms cold , cooked rice
2 eggs
salt and pepper to taste
1 stalk fresh coriander leaves - shredded
Method :
1. Heat the oil and fry the onions until light brown.
2.Add the rice and fry for a couple of minutes , stirring continuously.
3.Push the rice aside and crack the eggs into the centre of the wok.
4.Stir well for 3 minutes.
5.Add the prawns , peas , salt and pepper , and remove from heat.
6.Serve garnished with coriander leaves and red chillies.

Hi Rakhi,
While making fried rice with basmathi rice,you should add 11/2 cup of water for 1 cup rice.If u are adding vegetables you don't have to add extra water to it.Try this.

Hi!
My suggestion is not to use the pressure valve while making friedn rice, Here is what I do:
I fry the rice and veggies and then add 1.5 to 1.75 times boiling water to this fried mix, put it on sim and cook for 20 minutes with the lid closed - this will give you rice with excellent texture

For Fried rice, rice should be 3/4 cook in a rice cooker prefarably. After cooking the rice, open the rice cooker lid, so that the rice is cooled down. After the rice cool down, then you can make fried rice which will definetly taste delicious.

Hi Rakhi,
For 1 cup of rice & 1 cip of veggies, 1.5 cups of water should be enough. If the rice is old, you can add an extra 1/4 cup of water.
Also, squeeze half a lemon and add two tsp of oil while cooking, so that the rice does not stick.

I've never heard of fried rice being prepared in a "pressure cooker". One of the main tricks of fried rice is the state of the cooked rice, which cannot be over cooked and has to be separate grains. Fried rice is always prepared in a wok. Here's my recipe for fried rice -
Soak long grain rice (some prefer the short variety, esp. for chinese fried rice) for 20 minutes. Drop in salted boiling water. Strain when half done. Spread in a large flat dish/thali. Pour over a teaspoon of olive oil, cover and set aside.
Prepare small strips of veggies - carrots, capsicum (green pepper), finely shredded cabbage and green peas.
Heat olive oil in a wok. Don't let the oil burn when it reaches near smoking point add crushed garlic and dried red chillies, fry and remove from oil. Throw away. Add chopped shallots (the white ends of spring onions) and fry for half a second. Add shrimps/prawns or cooked chicken strips if non-veg. Then add the hard veggies first, i.e. carrot stir fry on high heat for a minute, add peas, then capsicum and finally shredded cabbage. Don't let it overcook. Just crunchy. Add the cooked rice set aside. Mix. Add 1/2 teaspoon white pepper powder. Many people don't like the smell of white pepper. You may add black pepper powder if you like. A teaspoon of soy sauce and a teaspoon of oyster sauce. Increase the quantity for more rice. I do not add MSG (ajinomoto as it is directly linked to cancer). Fry the rice on high flame. You have to work fast and quick. The rice and veggies should not overcook. All of the veggies should touch the wok and be cooked from the heat generated. When you are satisfied that the rice is just right, remove from flame and add chopped spring onions.

Chop wholegreen chillies(dont deseed them) and add to half a bowl (katori)of viniger, to which a pinch of salt has been added) let it stand overnight. Eat the fried rice with this or hot viniger chillie sauce. The best combination. If you need a recipe for chicken soup to go with this let me know.

Hai Rakhi,
Here is the easy way to prepare fried rice.
Prepare rice as u normally do and keep aside.
cook some vegetables like peas, beans and carrot.If u like sweet corn add that too.
vegetables can be cooked in microwave oven eithout water for 3 minutes.
Then keep the frying pan on flame and heat the oil. Put an egg on the oil and allow it to cook for just 2 minutes then chop the egg well.
Then add the cooked vegetables and pepper and fry them all. Now add the cooked rice and salt to taste. Fry them for 5 minutes on medium heat and ur tasty fried rice is ready to eat.
This is the way my husband used to prepare fried rice when he was bachelor since it is very quick and easy to prepare.

Hi Rakhi, Here's my recipe for chicken corn soup -
You will need -
Chicken bones
1/2 onion, 2 cloves, 1/2 piece carrot, a small piece of celery, white pepper powder, cornflour, geletine, tin of corn, one egg white, spring onions. A handful of cooked shredded chicken meat.
A soup cube if desired.
Collect the wings, neck, tail, legs and all other bony parts from a whole chicken, lightly crush these and put to boil in three cups of water. To this add a small piece of onion in which a clove or two is stuck. Add a small piece of carrot and half a stalk of celery (optional) and a couple of black peppercorns. Boil for 10 minutes. Add a dash of salt. When cooked, remove chicken meat sticking to bones and set aside. Cool broth and pass through a strainer. Set aside. If you wish you may add a soup cube to this.
Add a tablespoon of geletine with two spoons of water. Stir. Add two spoons of corn flour to two spoons of water. Stir.
Heat a little olive oil in a deep pot, when hot pour the contents of a can of creamy corn (Libby's)and fry/cook on high for 5 minutes. Add the strained chicken broth. Bring to a boil. Slowly keep adding the cornflour mixture to the boiling soup. Similarly add the geletine to the soup. Add 1/2 a teaspoon of white pepper powder to this. As it gets thick pour the white of an egg which has been slightly beaten from a hight and at the same time with a fork keep stiring the liquid. Add shredded chicken. Switch off the flame. Add chopped spring onions (the green part) and serve.
