Hi,
Can anyone give me the traditional recipe for the quintessential mouth watering snack called Sukhiyan. Thanx in advance.

Here is the recipe for Sukhiyan.
Sukhiyan
Ingredients:
Green gram (whole) 1 cup- Roast before cooking
Salt a pinch
Brown sugar ½ cup
Grated coconut ½ cup
Cardamom powder ½ teaspoons
Ghee 2 tablespoon
All purpose flour 1 cup
Salt a pinch
Make a thick mixture with just enough water
Method:
Roast the green gram in a heavy bottomed pan, until an aroma is released. Let it cool. Wash and cook the Green gram by adding a pinch of salt. Make sure that they retain the shape and not get mushy. When cooked, remove the lid and let all the excess water evaporate. Keep it aside.
Heat up a heavy bottomed saucepan. Add 2 tablespoon ghee and when it melts, add the brown sugar. Mix well and let the brown sugar melt. Now add the grated coconut and mix well. Add the cooked Green gram. Heat it up for a couple of minutes, mixing well, and remove from the stove. When cool, add the cardamom powder and mix well. Make small lemon size rounds with the green gram-brown sugar-coconut mixture.
Heat up a wok or a saucepan, and add 2 cups of oil. Place a dry wooden chopstick in the oil. If it sizzles, the oil is hot enough to fry the Sukhiyan. Dip each green gram rounds in the all purpose flour mixture. Make sure that it is completely coated with the flour mixture. Now carefully dip it in the oil and fry to a golden brown color.

Rimi's feedback forces me to try it out very soon.
Chitra, wouldn't it be good to post all the kerala recipes in your thread and just answer the requests that you have posted it there?(Like Hemantji is doing) So we can preserve all the kerala recipes there. Then it would be easy to search or find out a particular recipe after a long time. Do you think so?

Yes, you may use jaggery (Sarkkara or achchuvellam in Mal)instead of brown sugar. Hopefully you can get some good quality jaggery that is not contaminated with grit and dirt that used to be a real pain to scoop out from the syrup made during the sukhiyan preparation of the yester years.

Hi ranjith, here you go...
Mampazha Pulisseri

Ripe Mango, peeled & sliced -12 pieces
Green chillies - 6
Turmeric powder - 1/4 tsp
Chilli powder - 1/2 tsp
Grated coconut - 1 cup
Mustard & Cumin seeds - 1/4 tsp each
Fenugreek seeds - a pinch
Dried chillies - 2
Whipped yogurt - 1 cup
Curry leaves - a few
Oil for seasoning.
Salt - to taste
Grind grated coconut together with 3 green chillies and cumin seeds. Set aside. Cook mango with the rest of the green chillies, turmeric, chilli pdr and salt. When done, mash the mango well with a wooden spoon. Add ground coconut to it and bring the mixture to a boil. Turn off the heat. Heat oil in a skillet, pop mustard seeds, add, curry leaves, dried chillies & fenugreek seeds. When they sizzle, stir into the cooked mango and coconut. Add whipped yogurt and mix well.
