Hi Seetha - i have a simple recipe that never fails.
to prepare the pasta - boil it in water with 1/2 tsp salt and a tsp of oil. as the water is boiling start preparing the sauce.
Fry 1 big chopped onion, 2-3 slit green chillies, 1tsp ginger and garlic paste (better still if you could crush the ginger and the garlic pods). When the onion is translucent (not brown) add a cup or two of mixed chopped veggies (like carrots, beans, peas, cauliflower, capsicum and if you dont have anything else, you can also add potato - it works well)add salt and cover and cook till they are tender.

chop one tomato and a cup of grated cheese (processed ones like amul or britannia)add these along with 1 tsp of pepper. you can add basil or oregano if you like about 1/2 to 1 tsp(i preserve the packets that come with pizza - they are handy for pasta)cook over medium flame till the cheese melts. meanwhile drain the pasta and rinse with cold water. Mix the pasta well with the sauce and garnish with coriander. if in case you dont have enough cheese you can add a little instant soup powder (about 1 tbsp with 1/2 cup water)like maggi or knorr cream veg soup..and bring to a boil.
Let me know how it turned out..its real quick and tasty. I can give you a recipe for non-veg sauce if you like ... ciao and bon appetite

Hey seetha, here are some authentic italian sauces.
Neapolitan (suitable to freeze)
30g butter, 1tbsp olive oil, 1/2 kg tomatoes (blanced, deseeded and chopped), 1/2 tsp dried basil, 2 tbsp fresh parsley (or 1 tbsp dried parsley) - I have modified the recipe and added some chopped onions and garlic and chilli powder to spice it up a bit, c'mon indian food cant be bland !!! fry the onion and garlic in the butter and oil (if you're health conscious like me just use oil) and then add the tomatoes (you can use tomato puree if u like)basil and parsley. add salt to taste. stir in the pasta just before serving.

hey seetha this a little modified version of the original neapolitan sauce. I had to have mine spicier!! 30g butter, 1 tsbp olive oil, two onions finely chopped, 500 gms tomatoes (blanched, deseeded and chopped) 4-5 cloves garlic smashed (i dont cut my garlic just wham it with my knife !!!) chilli powder and salt to taste. 1/2 tsp dried basil, 1 tsp dried parsley (double the qty if you're using fresh herbs). Fry the onions and garlic till translucent (if you're health conscious like me use only oil) add the tomatoes, chilli powder (or green chillies if you like) and basil and cook till reduced to half, stir in the parsley and pasta just before serving.

this is the classic alfredo sauce. 90g butter, 2/3 cup cream, 1 cup grated parmesan cheese, chopped fresh parsley. combine butter and cream over low heat and cook till melted. remove from heat and add cheese and stir till smooth. add parsley and pasta. you cant freeze this sauce but you can freeze the neapolitan sauce.

basically you can use your imagination, use leftover vegetables, baked beans, soya, anything... in fact i read a recipe that made pasta in the cooker and it seemed easy, i'll look that up and post it for you. try them out and lemme know. i also can tell you how to make lasagna if you like. i just love making up my own recipes coz i like spicy food.
