Onion chutney

I live in south Florida. There is a restaraunt here called Punjab, also another called Dehli Dahbar. They serve a conoment they call " Onion Chutney". I have searched for this recipe and every rendition I see does not seem even close to what they serve. It's red, spicy, and the onions are still crunchy, not soft, but softened some. And when you look closely at the sauce, you can see very finely ground ingredients. I've been told from the local grocer, that not only are there myths that there are too many ingregients to list, but that the onions start off green and raw and marinate until they are ripened?
