can anyone please tell me how to make soft chappathi? thank you.

Hi Mrs. Mangai,
After reading CI’s suggestion to add yogurt to the flour to make Chappathies, this is how I tried it.
Chappathies
Ingredients:
Chappathy flour 3 cups (I used the brand, Golden Temple Durum Atta Flour)
Crisco shortening 2 tablespoons
Yogurt ˝ cup
Salt 1 teaspoons
Water just enough to make the dough
Method:
Add the shortening and the yogurt to the flour and mix them together very well. Add the salt to warm water and add water little at a time to make the dough. Knead and mix well. Cover the dough with a wet paper towel and place this in a bowl and cover with the lid and let it rest for ˝ hour.
Now take the dough and divide in to small spheres. Take each sphere and dust with a little flour and roll into chappathies. Take a pan and coat it with non stick spray and heat it up to medium temperature. Now place the chappathy on the pan, and when small bubbles appear on the surface, turn it over. Wait a few minutes and turn it over one more time. Take a piece of paper towel, fold it and press with this on the surface of the chappathy. This will make it balloon up. Now remove from the pan and apply a little ghee on it. Repeat the process until all are done.
CI wrote that this can be frozen for about 3 months and will be soft when you heat it up!
When I tried this recently, the chappathies were super soft and very tasty. The credit goes to CI. Thanks…..

Hai Mangai
Atta flour is not for our health.try to make chappathi in whole wheat flour.add yogurt and
some oil and mix with hot or warm water.

Hi AJ,
Crisco shortening is a vegetable product like Dalda and Vanaspathi. Here are 2 sites about Crisco.

Crisco shortening is available in US Grocery stores.

Yes, you may substitute butter for
crisco shortening and the Chappathies will definitely turn out very soft. Good luck...

Read you recepe ....I use Golden temple too ....but does your method leave the chappatis soft for hours ...as I eat them only after around 3 hours ....and my chappatis become dry and hard by that time ??

Hello Divs,
The chappathies remain soft for several hours after making them.
I place the chappathies in a plate and cover with aluminum foil, leaving the foil open in a small area for the steam to escape.
If you have a colander, you can place them in the colander on top of a dish towel. Cover the chappathies by folding the edge of the towel over them and then close the colander with the lid. By covering with the towel, steam won't condense and make the cahppathies soft. The towel will absorb the moisture.
You can also heat up the cold chappathies taken from the fridge, by heating them up in the microwave. Place them on a microwavable container and cover them with a wet paper towel and heat up for a minute. If they are still cold after a minute, heat them up for another 30 seconds. The chappathies heated up in this way will also be soft.

i am eating chappathis in the night in order to reduce my weight. so i cannot use oil,butter,ghee,vanaspathi etc., please if anyone could tell me how to make soft chappathis without any such things, it would be very helpful for me.

golden flour is whole wheat flour but if u get natures whole wheat flour it is very good. try for it
