CRISPY VADAI

Crispy Vadai
Ingredients
Urad dal 1 cup
Salt to taste
Green Chillies 3
Ginger 1/4"
Curry leaves 4-5
Oil for frying
Method:
1.Soak the dal for 10 minutes.
2.Drain the water and grind it in the blender with as little water as possible. When the batter is nice and smooth take it out of the blender, add salt, green chillies (chopped), ginger (grated) and curry leaves.
3.You can take a small piece of plastic wrap, sprinkle some water on top, and dip your fingers in a glass of water. Take a small ball of the
batter, spread it on the wrap as a circle, poke a hole in the midddle.
4.Meanwhile, heat the oil in a deep dish. Deep fry the circles we just made now.

Other type of vadai
Ingredients:
kadala parupu(channa dal)-1/2 cup
vulantha parupu(urad dal)1/2 cup
onion-1
Salt to taste
Green Chillies 3
Ginger 1/4"
Curry leaves 4-5
Coriander leaves
Oil for frying
Method:
* soak the dals together for an hour
* grind the dals along with chillies & ginger with little water. grind it coarsely(this is important).
* Now add onion,coriander leaves, curry leaves & salt to the mixture which is grinded.
* Mix well
* You can take a small piece of plastic wrap, sprinkle some water on top, and dip your fingers in a glass of water. Take a small ball of the
batter, spread it on the wrap as a circle, poke a hole in the midddle.
* Meanwhile, heat the oil in a deep dish. Deep fry the circles we just made now.
This is different & tasty vadai.

Hi,
Cabbage Vadai
Ingredients:
Cabbage 1/2 cup very finely chopped or grated
Urad Daal 1 cup
Onion 1 medium sized finely chopped
Green Chillies 2 finely chopped
Coriander leaves 1 tbsp finely chopped
Salt to taste
Oil for deep frying.
Procedure:
Soak daal for about 4 hours. Grind to make a fine paste using very little water.
Do not add excess of water while grinding the daal.
Now add the chopped/grated cabbage, chopped onion, coriander leaves, green chillies & salt to the urad daal paste.
Heat oil in a pan, wet your hand & take small quantities of the dough & make a hole in between & gently slide it into the oil.
If u cannot do it with your hand you can do the same procedure using a plastic cover & then slide it into the oil.
Always wet your hand before taking the dough in your hand. Wet the plastic cover, if you are using one.
Deep fry till golden color.
Serve hot with Coconut Chutney.

Hi,
this is a response to maya's vadai.I find that adding 2 or 3 tablespoons of rice to urad dhal
helps in making vadas really crisp.

Hey, the "wet your hand & take small quantities of the dough & make a hole in between & gently slide it into the oil. " is the hard part. Please devote more space for that. When I try and it usually becomes bonda and I end up making more (buttermilk) kozhambu just to use them.
The problem is not just mine, I watched while four of my sister's friends tried(women with cooking experience). They seemed to have no clue at all

It is easy if you grind the dal with little or no water. Use a food processor to grind the dal without water. Then it will be so easy to make doughnut shaped vadas.

Why not put the mixture in a cake icing dispencer it will be so mucher easier and no mess to the hands, and if you use a star nozzle you can have serrated edged vadas. Now, there's something for Mcdonalds to think about
