Any recipe with ricotta cheese

I have some ricotta cheese left over and if anyone can suggest any recipes that I an make it with, it would be useful.

You can use Ricotta cheese in desserts, like kheer, payasam, anything milk based. It adds a lot of richness to it, and tastes great. You can also make spinach puffs, using the following recipe.
Pepperridge farm puff pastry sheets
10 oz frozen chopped spinach (thaw, and drain well)
4-5 cloves of garlic, crushed
2 tbsp oil
salt to taste
1/2 cup ricotta cheese
1/3 cup parmesan cheese
1 beaten egg
crushed red pepper flakes, optional
Heat oil, and saute garlic. Add spinach and cook for 2-3 mins. Turn off the flame. Add ricotta and parmesan cheese and egg, salt and crushed red pepper. Mix it and use it as a filling. Do not cook after you add the egg.
Thaw the pastry sheet and lay flat. Put the filling towards one edge, and roll it up. Now cut 1/2" disks and lay flat on cookie sheet. You can make 20 disks out of one sheet. You can use egg batter to glaze if you like, but that's optional. Bake at 350 for about 10-12 mins. These make great hors d'oeuvres.

I am on the atkins diet and have been suggested ricotta cheese.I am stuck.Can i have it just like cheese spread or are there any interesting reicipies i can try.

Actually what Hermiopne suggested was very tasty.
Just use Ricotta seasoned with onion tomotoes and green chillies and use as a filling in whole wheat bread.
I'll see if i coe across any other good recipes
