help needed with lemon rice

could anyone tell me the correct way of making lemon rice.coz some say boiling lemon juice is not good.

~someone, use 1 day old or cooled rice (spreadin' it on a plate and cooling)make sure the rice is not sticky/mushy. To this rice add freshely squeezed lime juice (not lemon) and pl. do not use the stuff out of bottle, salt and turmuric.(taste to check sourness/salt. Heat 1 tspn of oil add mustard,urad,channa dals, slit green chilly(i prefer thai)and curry leaves. add the seasoning to the rice and mix well. garnish with corinader leaves. No measurement hotness/sourness is to ur taste.
if u like u could add chopped onions after frying chillies and some use peanuts add this when u add the dals, brown it a little.
next try the same receipe with lemon juice. u'll notice the difference, and pick ur choice.

someone, sorry i forgot to mention asafoetida (hing)this a pinch, add this last after u add the curry leaves.

Do u remember u gave me hints on grinding.since i was too busy i c'not get back to u.
I tried as u said .it came out good.soaking is my mistake.but once i used to make the batter with
kingsfood pb rice+fortune rice.it was soooo good
that it makes me feel dissatiafied with ponni.
i used 3 cups ponni + 1 cup fortune(pachai rice).
i thought i could get still more softness.do i have to go with 4 cups ponni.will that be better?

someone, see if u can find "food world brand, WHITE IDLI RICE it will be labled. U'll get excellent results!
BTW what is pachai?-raw?
Just few mths back i was using ravi/food world brands, ponni BOILED rice it should be labled.(NOT par boiled/raw etc.) 4:1 also, excellent results. Go ahead and use just ponni BOILED rice and make sure it is not par boiled. Just soak the rice for 6hrs and urad for 4 hrs.not any longer my friends soak both for 4hrs their idlis come out soft too.(but i've never tried) First grind the urad for 30mts(my tamilian friends make fun saying i grind for too long, well! (when u scoop up the mavue in ur hands it should stay and not pour off ur hands this mean too much H2o u used,and next remove the urad mauve and grind the rice again the rice should be of smooth/shiny texture, not necessary to grind it thick, just judge when u add the h20. i grind this also for good 30mts. and finally i add the urad to the rice mauve and grind for another 5 mts with salt. if u are using summet etc. u just mix both well adding salt.
Do not worry through trial/error like me ur idli will eventaully turn out soft. I used to get rock idli, my husband used to tease that he could hit and hurt someone with it! ;)

someone for lemon rice.
put the turmeric in the oil with the dal, mustard etc. Or it will taste raw. Also add a tsp sugar.

Lemon Rice
* boil the rice to 3/4th& keep it seperately
*Take fresh lemon&squeez out the juice,add little turmeric powder&salt to it.
*Temper mustard,urad dhal,channa dhal,groundnuts,red chillies,curry leaves& a bit of ginger paste(it adds taste but no garlic)
*Add the lemon juice to the kadai after tempering&immediately add rice to it.Fry for few seconds till evrything gets mixed well.Ready to serve.Goes well with potato curry

grind little bit of ginger + green chillies,
temper mustard and channa dhal and urad dhal,grounuts(optional).the add ground paste and fry well and add chopped onionswith curry leaves, the add turmeric and asafoetida,now add the boiled rice and squeeze lemon and salt mix well ,and garnish with coriander leaves . hope ginger_greenchillies will give additional touch to lemon rice. hope u will enjoy this .serve with potato curry or egg curry

Hi someone,
This is the way i make it...i keep the rice in the rice cooker and leave it for cooling once done. then in a pan i take little bit oil..ass asafoetida, curry leaves, green chillie, ground nuts , chana dal, urud dal, cashews (optional) and fry till golden brown then add turmeric..and turn off the gas...in the mean time add salt to the rice...then add the mixture to the rice and mix well...till all the rice turns yellow...the add lemon juice(that depends on the qty of rice and the flavour u want)....and your lemon rice is ready...

add only the lime juice(without the seeds) after mixing with rice, at the end add little of seasame oil
