Hi everybody,
I thing, we have to prepare boondis and sugar syrup(paagu) for preparing boondi laddu. Once i tried preparing boondis alone. But it came out so crispy and also it didn't absorb the sugar syrup well.
So, can anybody give me the recipe for boondi laddu. When i try to prepare sugar paagu with one or two threads, i go wrong in that.
Please give me tips for preparing soft boondis and sugar paagu.
Thanks.

Hi Sanju
The next time just try crushing some boondhis ( i crush most of them) before adding to the syrup. boondhis would only be crispy, and becomes softer after absorbing the syrup. If your problem is hardening of sugar syrup, just add a teaspoon full lemon juice to the syrup. This will prevent the syrup from hardening..and make laddoos when it is hot...

hai sanju,
take 1 cup of basan flour, 1 cup of sugar for boondi laddu.
to make the sugar syrup (1-cup of sugar add 1/2 cup of water), just dissolve the sugar, keep it warm the sugar syrup for low heat, sametime you make the boondi (don't make the boondi very cripy) dry it for few mins.,add the boondi at the sugar syrup and mashed it.if you like the dry nuts means fry the nuts add it then you make a ball.
i am doing like this way, its always came out very well., very tasty. enjoy it.

Hi Hema,
I tried the Boondi Laddu as per the recipe given by you. It came out so well. When i mixed the boondis in the sugar syrup, i felt that it will be impossible to make the ball. But the laddus came so well and so tasty.
Thanks for the recipe.

Hi R,
I didn't crush the boondis. I didn't let them(fry) become more crispy.
I prepared the sugar syrup with single thread consistency. Then, i mixed the other ingredients(food colour, cardomom powder...) and atlast i mixed the boondis. Still the syrup was bit watery. I was not able to make the laddus atonce. I kept it apart for sometime(nearly 3 to 5 min) till i could make the laddus. When it had set fine, i made the laddus(the mix was warm).
Take care that u don't let the syrup boil after the single thread consistency.
