Clay pot Cooking

About a year ago i made dal in a clay pot (man paanai)but though the taste was awesome there were some granules of red mud in the dal. I then tried to use it for storing water & setting curd but the granules still persisted & the pot is just sitting in the shelf since then.
Can anyone guide me as to the correct method of cooking & how to identify a good quality one while purchasing itself ? Also what are the dishes that can & cannot be cooked in a mud vessel?
Any info./advice/ suggestions are highly appreciated.

There's some cleaning process involved, i.e., the pot needs to be made ready for cooking. I don't know the process though :(

put the water and then bring to boil .repeat the process 3 times.try to prepare meen kuzhambu,karuvadu kuzhambu,kara kuzhambu.it would be very tasty and also good for health.

take few stems of palak, mint and chana dal paste with any oil u use for cooking rub the inside of the clay pot at least for 3 daysif it does not get clean than the qlty of the pot is not good

my mother says to boil water several times in the pot to season it.it also hardens it.if you still find particles maybe the quality is not good.
cooking in clay pot really brings a different taste.u will never forget it.i never blieved it until i tasted it.fish curry,injipuli,daal curry,saambaar etc tastes great in clay pots.it also eliminates the hazards associated with non stick.tryseasoning some oil bfore first cooking.all the best!

what is "crock pot"? available in U.S., i thought the inner side of the vessel made up of clay, am i right?., if not pl.,any one explain what is Crock Pot?.

I suggest you use Romertoff quality of clay pot. I have been successfully using all sizes of these pots for years. I have different clay pots for different uses... a fish cooker is superb and always used for that purpose. To season a clay pot for chicken, soak the pot for 20 minutes in clean water, then roast the chicken and I will be happy to send you my recipe... I use a different pot of same size for beef chuck roasts and always use that pot for beef. If you use the romertoff (german made) you will not have to be concerned with the quality! The larger size will accomodate a 14 lb turkey

P.S. the medium size romertoff will be perfect for cooking all dals or any type of beans. I cook chicken curry in the medium size romertoff with good success. There are also remertoff's for baking bread but I do not do that as I have limited time and bread baking is not a specialty of mine.

I can't seem to get all my thoughts together in one message... it is extremely important that you use a soft brush or sponge with baking sode to clean the pot...do not soak the pot as they are porous and any detergent or cleaning solvent would absorb into the pot and ruin the natural seasoning... and probably weaken the clay...after a few cookings the clay pots will season themselves and have a smooth surface. it is always important that the pot be soaked in water. I start the soaking as I clean the vegetables -- that way everything is ready to assemble in the clay pot when it is ready for the oven. I put the pot in a cold over then turn to 450 degrees Fahrenheit. The steam from the soaking process is utilized by the clay pot during the cooking process. If you are interested I also have a favorite whole fish with herbs that works very well in the romertoff fish cooker. I do not work for Romertoff but find it's quality to be the best!

I got a claypot from my kids , it is glazed on the inside.
I would love to know how to use this pot , because there is no explanation what so ever with it.
Er is a little pamplet that I can cook everything , on stovetop , in oven and microwave.
But have no idea how

Crock Pot is an electric appliance, it is a slow cooker used for making dishes like stew, chili etc where the recipes might require long hours of cooking on very low heat, for example "Haleem" which is made during the month of Ramzan in India is slow cooked like that. Maybe the electrical version of this evolved from earthenware, that I'm not sure. Hope this clears your doubt.
