Hi Priya,
Here is the recipe for Pani puri:
750g cup sooji
250g all puropse flour
Baking soda 1/4 tsp
water for mixing 1/2 lit.
Method: Mix sooji, flour and baking soda together and mix the ingredients. Leave this dough for 1 hr. Knead it well. Then flatten them and deep fry them. Make paani and then make paani with paani puri masala and stuff potato and chenna in between and serve. Hope you enjoy it. Bye.

11/4 cup fine sooji,
1/4 cup maida,
1/4 cup chapatti flour,
salt to taste
club soda to make dough (use instead of water)
Knead ingredients. Leave for an hour. Make little marbles and flatten them on a heated roti maker. Make several and then deep fry in hot oil. Remove when light golden brown. Too make extra crisp keep in warm over (170 deg) for about 10-15 minutes. Remove from oven, cool completely and then store in air tight box. Enjoy. Worth the trouble! Get the family to help you make the marbles and it becomes a fun project.

Puri: Noth worth making. buy from indian store. you can get 2 packets for about 5$
Pani: again they sell pani puri paste which is really good. You just mix with cold water
Stuffing: Boil potatoes. Mash them and mix with mashed chick peas (i use the tinned ones). Add chili powder, chaat masala, salt and lemon juice. Mix well.
Make a hole using your thumb in the puri, add stuffing, pour pani over it and enjoy.

Boiled and mashed potatoes with boiled chickpeas make excellent panipuri stuffing.Add chilli powder or chopped green chillies, a pinch of roasted jeera powder,salt and a dash of lemon juice or a pinch of amchur powder for the perfect tangy taste.
