I bought a packet of Priya Idli mix and it says to mix the content with 250ml of curds. The problem is that we don't eat dairy products. Is there anything else I can mix it with?
Another dumb question...when you say grind the rice and urad dal, what do you use? Just an ordinary blender?

Yes, just an ordinary blender will work fine to grind the soaked dal and rice. I use to do that.
Please wait for somebody to answer your first query.

Hi Sarita,
If you don't want to use curds, just add water to the mix. Make sure that you let the mix absorb water and then add more to make it to the batter consistency. When you are ready to pour the batter to steam, add 1/4 tsp of baking soda to the batter and mix well and then pour and steam. Idlis come out the same way. If you think baking soda is not good for health, you can use ENO fruit salt. (you might have to increase the amount of ENO to 1/2 a tsp)
Bye,
CI

Hi Sarita,
Add fenugreek seeds (vendhayam) along with ulundhu. Idlies will turn out very soft!

To get good soft idlis
3 cups rice
1 cup urad dal
soke the rice overnight in a warm water. soke the urad dal for not more than one hour before grind. First grind the dal into fine batter. Then grind the rice. Mix the rice and dal batter and add salt. Keep it outside for a day. When ur cooking keep the idli plates in cooker for not more than 10 minutes. U will get a very soft idli. Good luck
