Murukku

What is Murukku ? Is it Rice flour chakli ? and how to make it ? Please help.

Murukku is also called Chakli:
This is a Murukku recipe using rice flour, Urad dhal and Gram flour.
Ingredients:
Rice flour 3 cups
Urud dhal with skin removed 1 cup
Gram flour ½ cup
Salt 4 teaspoon
Asafetida powder 4 teaspoon
Cumin powder 4 teaspoon
Butter 2 tablespoon
Sesame seeds 2 tablespoon
Water enough to make the dough
Oil for frying (I prefer Peanut oil as this will not impart any taste to the fried item.)
Method:
Wash the Urud dhal and cook the dhal in a pan, pouring enough water to cook it well. Once the Urud dhal is cooked, blend it well in a blender. To this add the rice flour, gram flour, butter and all the other dry ingredients and mix well. Now add water little by little and make a soft dough, a little loose than that we make for chappathies.(then it will be easy to press this through the Murukku mould) When the dough is of the right consistency, cover it and keep it for 30 minutes to rest.
Heat up a deep fryer or a saucepan and pour about 3 to 4 cups of oil in it.
Now take the Murukku mould and fit it with the plate with one star on it. Fill the mould with the dough and press the dough through the star shaped plate and onto a dish towel making the dough fall in the shape of a round Murukku. Make a batch of murukku like this. Test the oil by dipping a wooden chop stick in it. If the oil bubbles around the chop stick it is ready to receive the murukku. Now take the murukku one by one and slowly place them in the oil and let it fry. You can fry 6-8 at one time depending upon the size of the fryer. When they float to the top of the oil turn them and wait until they become crisp. ( when they are done the bubbles around them will slowly subside.) Now take them out with a slotted spoon and drain them well. Place them on a paper towel for further draining. Repeat the steps until all the dough is done. Store the Murukku in an air tight glass or metallic container when they are cool.

Dear Chitra, can you post a recipe on how to do make kara murukku.My relative bought it from India, it was very crispy and tasted good.I believe it cosisted of rice flour, pottu kadalai powder. chillie powder, gingelly seeds salt and perungayam.Thanks.

Good crispy murukkus can be made using par boiled rice and pottukadalai. Soak 6 cups of rice in water overnight. soak required amt of red chillies and perungayam in water in the morning for abt half an hour and grind everything in the grinder till it is a smooth paste. water can be added while grinding but ensure that it is neither too watery nor very thick. make powder out of pottukadalai and sieve if required. it should be very fine. add 4 cups of the same to the ground rice paste and add 50 gms of butter and required quantity of salt and mix the dough without adding water. If the dough is very thick little water may be sprinkled and mixed. now heat the kadai and add oil. Press the dough in the murukku mould and deep fry in the oil. enjoy the crispy tasty murukkus. pls ensure that the rice is ground to a smooth paste.

Dear Mrs.Soma and Ratna,
To make spicy and hot Murukku you can add red chilly powder according to taste to the above recipe. Usually chilly powder is not added. Chilly powder, Perungayam (Asafetida), and Jeera together will give it a nice spicy taste and aroma.
Another variety is made with rice powder and gram flour with all the above mentioned spices. The ratio is, Gram flour 3 cups and rice flour 1 cup plus all the other ingredients. Urud dhal is not required here.
Sujatha has posted another variation which I will try.

Try this ratio-Rice flour:Pottukadalai(roasted gram) flour=4:1
Heat some water, when it boils well, add rice flour, mix well for few mts, switch the gas off. Now, mix the p.k.flour, butter, salt, jeera or sesame seeds, red chilli powder. The taste comes out greater than the other ribbon pakodas.

Hello Dear Hubbers,
Crispy and Tasty Murukkus can be had by adding Pottu Kadalai.We make different kinds of Murukkus .My favourite one is Butter/Ghee Murukku anf Jantakalu from Andhra.
I will post the recipe soon.
To make spicy and Hot murukku, please don't add red chilli powder.Crush Hot green chillies (paste) and add to the Murukku maavu.
You will have fantastic tasting Hot murukkus.

In NJ, there is a south indian snacks speciality shop has opened recently. I heard they have all kinds of things like vathal, seedai etc. But it is costly. So, u can enquire there, but the taste is really good and nice.

Murukku! Ha! Ha!
Everyone must have had the real taste of Murukku when we were kids. When the kids disobey their parents or involve in notorious activities, the parents or some elders grab the kids' ears and twist until they start crying. This is a form of corporal punishment. Twisting the ears is called "Murukku".Did you ever had one?
