Wheat Flour 1½ cup Maida 50 gms. Cold water for kneading As required Melted ghee or oil 2 tbsps. Salt 1 tsp method .Sieve the wheat flour, maida and salt together in a bowl. 2.Rub ghee or oil into the flours, slowly add water and make a soft dough and keep it covered with a damp cloth for 30 minutes. (Dough should be very smooth and elastic) 3.Knead well again an divide the dough into 6 portions and shape them into round peices. 4.Roll out each ball into a round disc, now place the disc on the back of your palms (palms facing down), circle your wrist slowly in an anti-clockwise motion. 5.Try to swing the roti in the air, again let it land on your palms, make a large very thin circle 12" diameter. 6.It should be as thin as tissue and expanded well. 7.Heat an inverted griddle (upside down), place the roti carefully on over the inverted griddle. 8.This roti takes hardly 1 minute to cook, once done it should be folded like a handkerchief and serve hot.

Kavi, do you live in US? If so all purpose flour is what maida is.

Hello Just Wondering!
Is your query about Rooomali Roti?
Roomali Rotis have its origins in perhaps a Lebanese/Syrian bread called Rekak or something similar.
It probably travelled to India through the invaders.
One difference, I know is that Roomali Rotis are traditionally made by men, whereas Rekak is made more by women.
Roomali Rotis are rarely prepared in homes. Maybe a few homes could be having this on a regular basis. Its not so easy to make it either. It involves great skill in flipping the bread and then cooking it on an inverted griddle simply called a Roomali Roti Tava.
Is it a traditional Indian bread?
Depends on how one classifies it. It has its place in mainstream Indian foods, but its origins are from somewhere else

ROOMALI ROTI
I AGREE THAT THE ROOMALI ROTI HAS PROBABLY MIDDLE EASTERN ORIGINS.
HOWEVER, WE USED TO LIVE IN A MUSLIM AREA IN LUCKNOW, AND MY MOTHER TELLS ME THAT THE MUSLIMS USED TO MAKE A DOUGH (QUIET WET) AND KEEP SLAPPING THE DOUGH ON A PLATOFORM WITH HANDS UNTIL A VERY THIN ROTI WAS OBTAINED AND THEN SLAP IT ON TO AN INVERTED KARAHI.
HOWEVER, THE MODERN DAY METHOD SEEMS TO BY ROLLING IT OUT INTO A LARGE THIN SHAPE RATHER THAN SLAPPING IT ON TO THE PLATFORM WITH THE PALMS OF THE HANDS.
DOES ANYONE KNOW HOW TO MAKE ROOMALI ROTI BY THIS TRADITIONAL STYLE. I AM NOT SURE HOW WET THE DOUGH SHOULD BE.
IF SO, PLEASE LET ME KNOW, AS I HAVE NEVER SEEN IT BEING MADE, ONLY HEARD ABOUT IT.
