lemon pickle

I recently had some lemon pickle at a restaurant and it was delicious! I found some commercial lime pickle at my grocery ("Patak's") and while it is OK, the restaurant's was better- a little sweeter and the lemon pieces, though pickled, were juicier and more flavorful. If I make this at home, using fresh lemons, will I get the taste I want? Should I add some sugar as well? Thanks.

add lemon juice too to lemon pieces. ofcourse you can add some jaggery or plain sugar.

This is the method my MIL used to make and also tastes very good. Chop the lemons into pieces(size depends) and put it in a wide mouthed jar without any water. Add salt and turmeric. Shake the bottle well for the next 10 days. If u want very soft, after 10 days, keep them inside the fridge. After 15 or 20 days, check them.
Now, do the seasoning-sesame oil with mustard, hing. Switch on the gas stove. Add red chilli powder. Let them cool. Before this, fry fenugreek seeds in a dry vanali, powder them. Add the same to the above with oil. Once the oil cools down, take the pickles and mix them well with oil, wow !! tastes like anything.
