Keralite items like Patchadi, KaaLan and Avial need Curd. A simple recipe with curd: "Inji Thayir". Grind grated coconuts (a handful), green chillies (4 numbers), ginger (a finger length) to a paste. Boil this paste for a few minutes adding a little water. Add curd and bring to a little boil and take out from stove. Add salt needed. Heat oil on kadaai, put in a spoon of musturd seeds, when they splutter add a spoon of lentils (urad dal), two pieces of dried red chillies and when lentils becomes pink, add curry leaves. Add this mixture to the curd mixture. Inji thayir is read. Yummy to mix with hot cooked rice and eat.(This is one of the items for "Lunch-Pooja" served to Lord Krishna of Guruvayoor.

Make Boondi raita with cursds. Real easy.
Add some salt and red chilli powder to curd.
At the time of your meal, add some boondi to it. Or if you like soft boondi, keep aside for 10 mins before serving.
Can be eaten with chapati or as a side dish.
I love this. This way you can finish off your extra curd and also left over boondis.

Hi all
Make a pouring paste of the besan and salt & water. Heat the oil and drop paste into hot the oil through a slotted spoon to get little drops falling at a time (these are bhoondi). Remove the drops when golden brown and dry on a paper towel to remove extra oil.
