Banana griddle cakes

Hi everyone: I have found that these delicious griddle cakes are really good for a quiet weekend family breakfast and more nutritious than those run of the mill readymix pancakes.
Ingredients:
2 cups rice flour
1 cup all-purpose flour
3 eggs
6 ripe bananas
1 cup brown sugar
1/2 tsp. salt
A pinch of nutmeg powder
1/2 tsp. baking soda
Method:
Roast rice flour lightly and transfer to a large bowl. Add to it all-purpose flour, brown sugar, nutmeg powder and baking soda. Combine all the ingredients and remove lumps. Mash the bananas and add them to the flour mixture. In a bowl separate the egg whites from the yolks, add salt and beat the whites to form stiff peaks.
Fold well into the flour mixture and add just enough water to make a thick batter. Keep aside at room temperature for 15 minutes. Heat griddle on stove. When quite hot, smear cooking spray and ladle on the batter. Turn flame to medium low, cover and fry. Flip and fry cakes uncovered. Repeat the process. When all the cakes are done, ring the breakfast bell, eat and enjoy!!!
Note:
During the cooking process if the griddle becomes too brown and greasy sprinkle a little water and wipe dry before spraying oil.
