Substitute for lemon juice

I wish to know is there any substitute for lemon juice! I rarely need to use lemon juice in my recipes. If I keep fresh lemon, it will not be good when I need it. Can we freeze it? Or is the powder 'lemon salt' available in shops will work instead of fresh lemon juice?

You can use Acitic Acid food grade .In common language, Acitic Acid is known as VINEGAR.
I , however advice you to use natural Vinegar.

Hi Smitha,
If you happen to be in USA, I have seen plastic bottles shaped and colored like a ripe lemon, which contain lemon juice. Maybe juice has some preservatives added etc but this stuff can last long when cooled and stored in Refrig.

Answers to two questions:
1. Rajma beans can be found in any grocery store as red kidney beans. These arethe red beans to "red beans and rice" that is popular in the American South, Mexico, Caribbean, etc.
2. The lemon (or lime) juice you can find in the store will last months, although the taste does not quite equal the freshly squeezed juice (no surprise, I'm sure). The brand name is "Real Lemon" or "Real Lime", although the generic store brand is usually fine. Before I got married, I would use this all the time, but now my wife has convinced me to switch to actual lemons and limes...We make enough lemon rice that our citrus is always fresh.

woops - I don't think you use Rajma for dal makhani...We don't make this at home, but I remembered the dhal beinmuch smaller wen we eat at north Indian restaraunts. I just checked a recipe for this and found toor (Thuvar) dhal and urad dhal recommended in different recipes. You might find these easier to come by in a South Indian kitchen.
