Gluten Free Foods

Need some info. on GLUTEN which is present in wheat flour. My niece was diagnosed with gluten intolerance & to improve her weight , needs to be fed only gluten free foods.
Can someone please tell, what does not contain gluten & can be given safely ?
Because even oats, barley, rye, maida etc. are said to be glutinous; Only cornflour & rice seems to be ok, as even biscuits, cake, sandwiches, pasta/noodles, chapathis all are forbidden. Do dals, semolina etc. contain gluten ?
