Spinach Dal Curry

Fresh Chopped spinach - 4 cups,
moong dal - 1 cup,
grated coconut - 4 tsp,
cumin seeds - 1 tsp.
Onion - 1 medium size finely cut (Optional)
Butter / Ghee or Oil to season

Wash spinach and chop into small. Cook moong dal in a pressure cooker and until the dal is done. Then add the chopped spinach into the cooker with the mashed dal with desired salt and water and cook till the leaves are done. Grind coconut and cumin seeds to fine and add to cooked spinach. Remove from fire when it is done.

Take Ghee / Butter or Oil in a fry pan, add mustard and 1 or 2 dried chillies and curry leaves and when mustard seeds pop up and the chilles turn red, add the finely cut onion and once the onions start turning brown, add the seasoning to the curry.

Tastes good with rotis and rice.
