Dear Mini,
Thanks for posting those sites. They are very informative. Yes, they contain information about how to reuse the oil after frying.

Hello Mr. Pradheep,
If u ask apple is better or mango is better for health, definitely will reply apple is much better than mango, because u can feed the apple even for kids, but with mango it is not same. So, dont compare ur (above) query with my query.
When we start growing older, we should not see the taste, shd give a look on the health side. Even for mor kuzhambu or aviyal, sesame oil goes well from my experience. Also, i had rava upma which made with olive oil which is a south indian dish, the flavor comes out really good and great.
Ultimately, considering our health point of view, it is nothing wrong to change the oils for dishes (rare dishes are always there that we cant change at all)whether it is north or south !!

Why not mango be fed to kids. we gave mangoes to our kid when he was 3 and a half months old. mango is very nutritious, rich in vitamin A, and many other phytochemicals.
Anyway what I meant was both apple and mango are nutritious in their own way. One that provides more that the other doesnot provide.
Regarding oil I did not mean to say , we should use specific oil for specific food. since each oil has its own nutirtioankl and health benfits, the simple appraoch to use all oils is to use them for specific dishes so that you will remember to use them often. Olive oil I dont use for indian cooking excepot chutneys is that heating olive oil is not that good.
Nothing wrong to change oils, but dont stick on to only one oil, if you use oil too much for your cooking.

The dietary guide introduced a decade ago has led people astray. Some fats are healthy for the heart, and many carbohydrates clearly are not

Highlights:
Since 1992 more and more research has shown that the USDA pyramid is grossly flawed.
New pyramid recommends that the bulk of one's diet should consist of healthy fats (liquid vegetable oils such as olive, canola, soy, corn, sunflower and peanut) and healthy carbohydrates (whole grain foods such as whole wheat bread, oatmeal and brown rice).
High intake of fruits and vegetables is perhaps the least controversial aspect of the food pyramid. A reduction in cancer risk has been a widely promoted benefit.
Many people have avoided nuts because of their high fat content, but the fat in nuts, including peanuts, is mainly unsaturated, and walnuts in particular are a good source of omega-3 fatty acids. Controlled feeding studies show that nuts improve blood cholesterol ratios, and epidemiological studies indicate that they lower the risk of heart disease and diabetes.
peasant farmers in Asia and elsewhere, who are extremely lean and active, to consume large amounts of refined carbohydrates without experiencing diabetes or heart disease, whereas the same diet in a more sedentary population can have devastating effects.
