Hi lathakrishan,
Here's a Mangalorean Salt fish recipe by Anna Mascarenhas. I think you can use the same to prepare dry fish too. I haven't a clue as to what type of fish Sondale is. Maybe somebody in this forum could please explain...
SALT FISH CURRY

INGREDIENTS :
1) Sondale
2) Onion
3) Oil
MASALA:
1) ½ coconut
2) 8 long red chillies
3) 2 tbsp coriander
4) ½ tsp cumin seeds
5) 6 pepper corns
6) ½ tsp mustard
7) ½ tsp turmeric
8) 3 flakes garlic
9) lime size ball tamarind
METHOD:
Fry an onion till brown. Add masala, fry a little, add masala water and boil. Then add salt fish. Later add green mangoes, cut in slices and previously boiled. You can eliminate the tamarind if green mango is added.

Hi Latha,
Salted dried fish fry:
Cut them into 1 inch size slices and wash them very well. For 2 cups of fish slices, blend ¼ of a big onion, 4 cloves of garlic, ½ inch long fresh ginger with red chili powder (1 tablespoon or according to tolerance, and 1/8 teaspoon turmeric powder. Apply this masala to the fish and let it marinate in the fridge over night. No need to add salt as the fish was salted and dried originally.
Heat up a small saucepan (Non sick type preferred). Add about 2 tablespoon oil in it. When the oil is heated up add the fish slices, a few at a time, and fry them on both sides for 2 minutes. Then reduce the heat to medium low and fry to a crisp consistency. Remove and drain on a paper towel. Serve them with rice when warm.

Salt fish Bulchao
Ingredients:
Use Seer, Promfret, Kodava or any good fleshy Fish. Soak the Salted Fish in water for a while, drain & apply Turmeric Powder & fry the Salt Fish – keep aside to cool – remove the bones & mash the flesh – keep aside. Oil ¼ cup. Ingredients Required: Onions-minced, Green Chillies minced; Green Corriander chopped finely; Curry Leaves. Ginger, Garlic paste; Chillie Powder, Jeera Powder; Salt to taste.
Method
Fry the minced Ingredients in Oil, till the Onions are brown, add Ginger/ Garlic Paste, & continue to fry on Medium Heat till the raw smell of Garlic disappears-say for about 2-3 mins. Add Chillie Powder & Jeera Powder & fry well till the oil comes to the surface now add thick Tamarind Juice,& mix well add the mashed fish & allow to thicken but do not allow to burn, allow to cook till required thickness is achieved, (thick like a chutney consistency). Remove from fire – let it cool bottle & keep.
