Hi,
This is the recipe for poha,
Have onions, potatoes, coriander leaver, curry leaves amd green chilles chopped into small pieces.
Wash rice flakes once ..drain out most of the water and keep aside..Do not wash it for a long time.
In a pan take oil add Rai ..let it splutter add curry leaves, green chillies and oinions ans saute for a while..when the onions change color add potatoes and a handfull of ground nuts.
add turmeric powder and salt to this. Once the potato is cooked add the rice flakes and mix well..the yellow color of turmeric should be spread evenly. cook for a few minutes and Poha is ready to server. Garnish with coriander leaves.
If you like u may add tomatoes as well.

Ingredients: Poha, onion, g.chillies, mix vegetables (carrot, beans, peas) cut finely or thin long slices, ginger-garlic paste, salt, oil or ghee and coriander leaves.
Method: Wash poha thoroughly and squeeze out the water. Keep it aside. In a broad pan heat some oil, add some whole masala items like bayleaf, cinnamon, cloves and some saunf one by one. Then add finely cut onions, green chillies and fry till brown, then ginger garlic paste. If you want you can grind a tomato along with that. When the raw smell goes, it is the time to add cut mixed vegetables, saute for a while, let it cook with little turmeric powder and salt. Now add the poha, mix well sprinkling very little water so that it doesn't become too dry. switch off and add cut coriander leaves. If you want you can add cashews roasted in ghee and some mint leaves also. Now POHA PULAV is ready to eat. It goes well with raitha or mint chutney.

The way I make poha is as follows:
Wash the poha once, drain the water, and keep aside. Sprinkle with a little water until ready to cook.In a pan heat oil, add mustard. when it crackles, add broken peanuts and after a minute add small cubes of potato. Cook until the potatoes are soft, then add tumeric, chilli powder, salt and a little sugar and the poha. Mix well and serve.Garnish with cillantro.
