Simplest 'Ishttu' is made of coconut milk. Make three different concentrations of coconut milk first. The 'very dilute', 'the slightly thick' and 'the very concentrated', by using the powdered or cream form of coconut milk available in the market. Take one cup of each type and keep ready. [Traditionally the most concentrated comes from the first sqeezing of grated coconut meat, 'the slightly thick' comes from the second sqeezing with hot water and 'the very dilute' variety comes from the third squeezing].
Pressure cook two or three potatoes whole. After they are cooked, cool them and skin them and cut them into small pieces. Pour the 'very dilute' coconut milk on them and cook adding salt, split green chillies (two or three), chopped ginger (about a teaspoon) and chopped onions (one cup).
When the potatoes become more softer, add in the 'slightly thick' coconut milk and boil. Take out from heat and add in the 'very concentrated' coconut milk at the end. Sprinkle curry leaves and two or three teaspoons of coconut oil when the gravy is still hot. Serve hot with idlies, dosas or even cooked rice.
