  Excuse my ignorance but what exactly is maida? Is it the normal flour we use for baking cakes?
  Is atta flour the same as maida? I buy atta flour from an Indian grocery store in Lisbon, it doesn't have any brand,they weight it in front of you and I can tell you it's the best flour I've ever used. I don't make chapaties because I'm not very good at it but I use it in pizza dough or pies and even the smell of the raw dough is fantastic.

  All purpose flour is Maida.
  
  I need a small favour from you.
  Can you send me dried culture of Kefyr?
  
  Best method to dry Kefyr curd is using absorbant tissue paper, absorb all water from curds.
  Using more tissue by just pressing the mass, you will have almost powder form of kefyr. Let it dry naturally in shade. In a couple of hours , you will have fine mass (About two spoonfuls).
  When you have that, again pack it in tissue paper fold and you can send me by ordinary post.
  If you can do it, I will be grateful to you.
  If yes, I will send you my address by mail.

  I think I have enough kefyr to give you now. I have a little doubt: when I absorb the liquid of the kefyr should I rinse it a bit before doing it or not and should I squeeze it or do it very softly? I also need the address I should sent it to.
