Well I remember using orange juice instead of water in a cake mix I bought from the grocery store. It turned out good. I am looking for an alternate recipie too.

Hi, I found this recipe somewhere on the web.
Pineapple Orange Cake
1 box yellow cake mix
8 oz. cream cheese, softened
1 1/2 cup powdered sugar
1 large can crushed pineapple
2 small cans mandarin oranges, drained
1 box (4 serving size) instant vanilla pudding
8 oz. whipped topping
Grease and flour two 8 or 9 inch round layer cake pans. Bake cake according to instructions, allowing to completely cool on wire rack. To make frosting, beat softened cream cheese with powdered sugar until thoroughly mixed. Add pudding and mix well. Stir in undrained crushed pineapple and chopped manadarin oranges (drained) . Reserve a few oranges for top of cake. Fold in whipped topping. Chill.
To assemble cake, cut layer cakes horizontally so you have 4 layers. Place one layer on plate, frost with chilled mixture, add layer, and so on. Put frosting over top and on sides when all 4 layers are assembled. Arrange mandarin oranges on top for decoration.
Best if made the night or day before serving.

I am looking for a fruit cake recipe that is made with dates, nuts and fruit. It is brown in color and has a wonderful orange flavor. My grandmother would make it for us at Christmas time.

Hi Brenda,
When i was looking for some recipes in the net, i got this. I think this would help you alittle. Good Luck with the cake!
FRUIT CAKE
Ingredients:
1/2 cup Butter (3/4 stick)
1 cup Brown Sugar
2 Eggs
1 1/2 cup Flour (all-purpose flour)
1/2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon powder
1/4 cup Milk
1/4 cup Jelly (preferrably apple)
1/2 tsp Vanilla
3/4 cup Nuts (Badam, Pista, Kaju, etc.)
3 cups Fresh Fruit Peels -dried (the easier method would be to buy Sun Ripe Fruit Cake mix from any grocery mart; the difficult method - trust me you don't want to know)
Method:
Pre-heat the oven to 300 degrees.
Bring the butter to room temperature.
Dice the nuts into small pieces.
Beat the eggs, sieve the flour and then add the rest of the ingredients.
Bake for 2 to 3 hours at 300 degrees till the cake is dark brown or the knife comes out clean.
