Just want to know some side dishes which i make with carrots.

Grate the veg., and do seasoning with mustard, jeera, red chillies, curry leaves, dhals in oil, fry carrots, can have it just like that or add coconut, mix, or the third option, dry dry sesame seeds and jeera with red chillies, grind them. Pour over the powders, stir them.
If u r chopping that veg., then can make paruppu usili which is a very good dish to do. or just add coconut with onion. Or Take equal quantity of veg., like carrot, cabbage, beans and make kootu, as usual. These are all the combinations for rice.

Hi,
You can make Carrot Kurma which goes well with Chapathi, poori, roti.
For that you have to chop carrots into small pieces, chop onions.
Fry onions in oil after seasoning it with mustard,turmeric, and cumin seeds(optional).
After onion is cooked, put carrots and let it cook. Add salt. Meanwhile, grind some coconut, some green chillies (You can use red chilli powder too), poppy seeds, ginger, garlic(if you like it) and pour this masala to the onion carrot mixture that is being cooked. (You might add masala before carrot gets cooked completely) Garnish with coriander leaves, Your side dish of carrot is ready.

Carrot Palya:- goes well with chapathi
Grate carrots.
Chop onion, slit green chillies, chop fine coriander leaves.
heat oil- season with mustard, urad/channa dal, curry leaves, slit g chillies and onions.
Add the grated carrots and fry for 3-4 mts cover and cook on low heat.(do not add H20 just cover and cook on low heat and Not necessary to cook the carrots fully, LITTLE crunch to it is perfect.
Granish it with corinder leaves.(can add litle grated coconut if one is not concerned of calories) Vola its done!
CI, poppy seeds needs to be roasted before its ground?

Hi Meena,
Poppy seeds need not be roasted before it is ground. You can powder them before putting with other stuff to make it easier to grind though.

hi read your recipes. sounds great. can you tell me the exact quantity of carrots and other ingredients that have to be put for the two recipes? any other dishes that can be shared for chapathis and pooris?

Hi vidya,
For the carrot palya, NO actual measurements, i just add LOTS of chilly(for i prefer spicy food) and 1 large yellow onion.(if i have lot of carrots then i add more onions), And carrots, it depends how much playa my fam. will consume!!! ;)

Hi Laxmi,
Here's a very simple & quick recipe with carrots :
Your will need :
carrots 1/2 kg
oninos 2 large (finely sliced)
garlic 3-4 cloves (crushed)
curry leaves 2 twigs
pepper powder 1/2 or 1 tsp
salt to taste
water very little
oil/ghee 5 tbsp
(1)Scarpe the outer skin slightly & wash.
(2)Cut carrots lengthwise into quarters and slice into small pieces (I usually user the slicer and get fine circles.)
(3) Using very very little water + salt,cook on slow flame till all water dries up.
(4) Heat about 4-5 tbsp oil or ghee .
(5) Fry onions & curry leaves till soft & add garlic & fry a few minutes.
(6) Add the cooked carrots, pepper powder & mix well.

3/4 Kg of potato and 1/4 kg of carrots go extremely well when you make podimas style. Using a chopper, finely grate raw potato and carrots, add finely chopped onions and make a mash. In a pan add 2 tbsp olive oil and splutter mustard, bengal gram, coarsely chopped green chillies (and curry leaves if you have.) Add the mashed matter (they hold together extremely well because of starch in the potato)and turn it over several times until mixed well. Cook over slow flame for about three minutes, check for consistency. In 100 ml of water add salt and juice of a small lemon; pour over the potato and mix well. Cook for another two minutes. great tasting stuff.

recipe for carrot pachadi:
Grate carrot and mix with fresh yoghurt. Heat one table spoon of oil, season with mustard, green chillies, a pinch of asafoetida. Add salt to taste. goes well with fried rice or chapatis.

For patchadi, u can try this method too. Grind little coconut, ginger and green chillies nicely. Mix this with yogurt and add grated carrot. Season in oil with mustard, urad dhal and hing, add it to raitha. Now, ready to serve.
