Hi,
Does anyone know the recipe to make the cutlet-chana that invites you at the entrance of Marina beach? (I am talking about the mound of aromatic spicy chana masala in a thallu vandi decorated with tomatoes and onion slices, served hot over potato cutlets). This used to be one of the rarities I was allowed to eat during my childhood after begging and pleading with my parents (as it was categorised as street food). :)
Been ages since I moved out of Chennai now.. but I am dying to eat this "delicacy". Any help with the recipe or even something close will be greatly appreciated!.
Thanks
D

Hello D,
I got this recipe a long time back from "The Hindu" magazine and it is a side dish for bread(bread channa). this is my son's as well as his friend's fav.,
Here it is-
Kabuli channa 100 g
onion 1 or 2
channa masala powder 1 tsp
ginger 1 inch
green chillies 5
tomato 1
coriander and pudhina leaves for garnishing
red chilli powder optl. and salt.
Soak the channa in previous night, the next day wash them and cook them with salt. Grind ginger and green chillies without adding water.
In a pan, add oil, onion, saute them and add the ground paste, fry them more till the raw smell goes off. Now, add masala powder, red chili powder, cut tomato, boiled channa and salt. Let them boil till u get the desired consistency.
I use to mash the one fourth portion of channa so that it will be thicker. finally, garnish it with the above said leaves.
Try and let me know!!

Hi, Just wanted to update y'all. Made ragda pattice (you can get the recipe from umpteen number of places.. justtype ragda pattice in google and lo...).. but made the ragda with little bit of carrots and potatoes too. Added chopped cucumber, tomatoes, raw onions and cilantro as toppings for the ragda and added sweet chutney and green chutney on it.. Tasted pretty close to the cutlet -chana although not authentic.
May be this will be of use to someone who is looking for a similar dish to indulge in.

It is called Kondai Kadalai in Tamil and is called Chick peas or Garbanzo beans in English.
