Some one tell me how to make crisp SAMOSAS

when ever i try it out at home
taste is great
but after an hour its not crisp anymore
help me!

Hello Prabha,
I think your problem is the excess wetness of the stuffing.Ensure that the masala that you are stuffing is not wet.Second thing is that the Maida cover you are using should be of atleast 2.5 to 3 mm thickness and should be sufficiently dry.You must use wet maida as a sticker and then deep frying should be done on low /medium flame uniformly.Samosas fried on medium /high flame become brown soon and become soggy as the wet masala leaves water and moisture.
If you keep the above in mind, your samosas would keep crisp.Second thing is storage.Do not cover samosas in a vessel.Use just plain paper/cloth or mesh to cover and store.
Reheat the samosas in an oven /micro and use.

Hai Prabha, as Hemant mentioned the stuffing should be dry and also while kneading the dough you must add heated oil (not hot oil )to maida mix well,than add water little by little to it to get crispy samosa.

Hello
I think that before you add the stuffing you should drain them after washing them therefore all the ingrediant that are going into your samoso wil be dry.

I am really stuck with this samosa !!!!
