Here's a good recipe for chicken tikka.....
You need a tandoori oven.Or you can grill it over charcoal fire for that ethnic taste!
Take 1/2 kg of boneless chicken chopped into 2 inch pieces.
For marination.....
1.ginger garlic paste - 2 tablespoons
2.chilli powder - 1and half teaspoon
3.garam masala powder - 1 teaspoon
4.raw lemon juice - 2 teaspoons
5.curd - 150ml
6.food colour[red] - one pinch
7.salt - to taste
Method....
1.Wash the chicken and drain.
2.Put all the above ingredients into the bowl of chicken and mix well with your hand as if the ingredients coat the chicken pieces well.Mix slowly and gently as if the chicken pieces does not gets deformed or whither away.
3.Place it in a closed vessel in the refrigrator[NOT in the freezer compartment] for atleast 6 hours. If you keep it overnight it will taste much better.Mix the marinated chicken in periodic intervals atleast thrice before cooking.
Cooking......
Take a long iron rod which is sharp at one end[the rod which you could have seen while cooking tandoori chicken]
Fix the chicken pieces in the rod by piercing the chicken pieces.
Now place the rod with chicken on a barbeque grill.[Those who dont have a barbeque grill, dont worry. There is a raw method to cook tikka.Just place two pairs of bricks horizontally side by side with 1 feet gap inbetween them.Spread charcoal inbetween them and lit fire.Dont let the fire to flame up.Just let the coal to glow. Now place the rod on the bricks as if the chicken gets suspended approximately 1/2 feet above the coal.Roll the rod periodically as if all the sides of the chicken gets cooked uniformly.Approximately after 10 - 15 minutes the chicken will get cooked well.Take care that it doesnt gets charred!Actually you dont need to apply any oil on the chicken. The fat in the chicken itself is enough for getting cooked. But if you need oil then you caqn apply a little on the chicken with a brush.
Garnish...
Now place the chicken pieces on a plate.Stick a tooth prick on each chicken piece.Serve it along with spring onions, carrot and pudina chutney.
Hope this tikka recipe is easy.Try it!
