Hi Hema,
This is my fail proof poori receipe for pani puri.
1 cup soji( Rava)
1 Tbsp. Maida( White Flour)
1 Tsp. Salt
1 Tbsp. Oil
Mix everything very well and add water to make dough. Do not make more than 2 cups dough. After making dough cover with damp cloth. Roll very small of dough ( same size as chick pea) and fry it right a way. When you deep fry in oil lightly touch the poori once and it will puff. Your oil should be on medium high.
Try this receipe and let me know.

Hi Hema,
My own receipe for Panni is very easy to make and I am following this for years and years. I am sure you will find it easy too. Let me know once you try.
2 Tablespoon Emali ( Tamarind)
1 Tablespoon dry or fresh clintro( Kothmari)
1/4 Teaspoon Chilli Powder
1/4 Teaspoon Jeera Powder
1/4 Teaspoon Black Salt
1/2 Teaspoon Chhat masala
Add salt to your taste.
2 Tablespoon readymade Panni poori masala ( you don't have to use if you can not buy it)
sometimes I just don't have panni poori masala in my house so I don't use it at all.
Let me know.
